Fresh Creamed Corn

There is nothing better than fresh creamed corn. My mama made the best I have ever tasted. She is no longer with us. And I never bothered to ask her how she made her creamed corn. So this is my attempt at trying to copy her recipe. It comes close but its not Mamas.

Fresh Creamed Corn

1 stick unsalted butter

5 cups fresh corn kernels (about 6 ears corn cut of the cob)

1/2 cup heavy cream

2 teaspoons sugar

salt & pepper to taste

In a large heavy dutch oven,melt the butter over low heat.Stir in the corn and saute it for about 3 minutes. Add the cream and cover the pan. cook for 5 minutes. Remove the lid and continue to cook for another 5 minutes or until the mixture is thick and creamy. Remove from the heat . Add the salt,pepper and sugar. Stir to mix well. Serve immediately.
