Fresh Green Beans

3 or 4 pounds fresh green beans washed and snapped

1 large onion peeled and sliced

1 hamhock or several slices of bacon cut into bite size pieces

5 or 6 cups chicken stock or water

1 teaspoon black pepper

1/2 teaspoon garlic powder

1 tablespoon apple cider vinagar

Put everything in a large pot and bring to a boil. Reduce the heat and simmer for 4 to 6 hours. Or until the beans are tender.

Mama’ s Chuck Roast

Mama always made the most delectable chuck roast. She would put it on the stove early in the day and let it simmer on low till supper.

Mama’s Chuck Roast

1 chuck roast

salt

Pepper

water

Heat alittle bacon grease in a heavy skillet (mama always used cast iron). Sprinkle salt and pepper on all sides of the roast. Brown the roast on all sides. Add enough water to come up about halfway on the roast. Simmer several hours adding warm water as needed to keep the roast surrounded by water. About 6Â hours is all you need to cook this roast. It will be able to be pulled apart with a fork.

Leftovers make great BBq’d Beef.

Billy’s Coming to Dinner Crock Pot London Broil

Tim’s brother Billy was suppose to come to dinner. So I decided to make London Broil. But the A/C died yesterday morning. So using the oven was out of the question. So I decided to create a Crock Pot recipe. It was hot as the devil in the house yesterday. No matter how many fans I had going nothing helped. I decided about 10 am that cooking was out of the question. So experimenting began.

Billy called about 4:30 pm and said he couldn’t make it for dinner. I was alittle ticked but figured it was better for him not to come just incase the London Broil was awful and as hot as it was in the house there was no need for him to suffer in the heat along with Tim and I.

I was really surprised that dinner turned out great. So I decided to share the recipes with ya’ll. Hope you enjoy it.

London Broil

1Â London broil

1 small onion sliced

1 teaspoon garlic powder

1 1/2 teaspoon season salt

1 pound fresh mushrooms cleaned and sliced or 1 large can drained

1/2 cup water

3 tablespoons flour use at the end to make gravy

Place all the ingredients in the crock pot except the flour. Turn the crock pot on low for eight hours. Remove liquid from the crock pot and measure. Pour into a sauce pan and add the flour. Whisk until thickened.

Jasmine Rice Microwaved

1 cup Jasmine Rice

1 &1/3 cups of water

1/2 stick of butter

Place the rice, butter, and water into a 2 quart microwaveable container. Cover Microwave on high for 5 minutes. Reduce the power to 50% and microwave for 10 more minutes. Let sit for 2 minutes. Stir and serve.
