Mixed Greens

Get only the smallest leaves possible for the tenderest and sweetest greens. I usually combine Mustard and Collards or Collards and Kale. Sometimes I combine Mustard and Kale. Or I just make a pot of one or the other. Just make sure to get greens that are fresh not yellowed or wilted.

Wash the greens well, making sure the greens are well washed to remove the sand and field dirt.


5 pound of greens your choice washed and trimmed

3 cups chicken stock

1 or 2 ham hocks depending on size

2 large onions peeled and quartered

1/3 cup brown sugar

4 tablespoons cider vinegar

2 dried red hot peppers optional

few splashes your favorite beer optional

Place all ingredients into a large stock pot. Bring to a boil, reduce the heat and simmer for 3 to 4 hours uncovered on a low heat.

Reserve the pot likker for later use or for dunkin hard bread into. YUM!!!!!!
