Brown Sugar Dumplings

This is a very sweet dessert that if you are a diabetic beware.

This is another great recipe that I got when in Pennsylvania Dutch Country several years ago. I believe this is a great unusual dessert.

Brown Sugar Dumplings:

Syrup

2 cups packed brown sugar

2 cups water

2 tablespoons butter

1 1/2 teaspoons vanilla

1 teaspoon fresh nutmeg

1/8 teaspoon salt

In a sauce pan on medium heat combine all the syrup ingredients.Cook for about 5 minutes or till the sugar is dissolved and the butter is melted. Pour into a 9 x 13 inch greased baking dish. Set aside. Pre-heat the oven to 350 degrees.

Dumplings

2 cups sifted all purpose flour

1 cup packed light brown sugar

2 teaspoons baking powder

1/2 teaspoon salt

3/4 cup milk

1 1/2 tablespoons unsalted butter

1 1/2 teaspoons vanilla

3/4 cup chopped pecans or walnuts

1/4 cup chopped dates and figs optional

In a mixing bowl using your hands combine the flour, brown sugar, baking powder and salt. Mix until well blended.

Add the milk, butter, vanilla,nuts and fruits if using. Mix with a wooden spoon.

Drop by tablespoon into the syrup mixture.

Bake for 40 minutes or until the dumplings are golden brown and the syrup is bubbly.

Serve with Whipped Cream.
