Raggedy Robins

This is a recipe that was a dessert with the school lunches back when I was in school. They are also called No Bake Cookies. This is the recipe that I learned in Home Ec. Hope ya’ll enjoy them. These are a simple but tasteful cookie.

Raggedy Robins:

1 stick of unsalted butter

1/2 cup of milk

2 cups sugar

3 tablespoons unsweetened cocoa

1 cup creamy peanut butter

1 1/2 teaspoons vanilla

1/4 teaspoon salt

3 cups quick cooking oats

In a sauce pan over medium low heat, mix the butter,milk, sugar, and cocoa; stirring constantly bring to a boil. Cook for one minute; remove from the heat;add the peanut butter, salt, and vanilla. Stir to combine.Stir in the oats quickly. Using a tablespoon drop onto waxed paper. Let sit for 1 hour unrefridgerated. Store in air tight container.

Brown Sugar Dumplings

This is a very sweet dessert that if you are a diabetic beware.

This is another great recipe that I got when in Pennsylvania Dutch Country several years ago. I believe this is a great unusual dessert.

Brown Sugar Dumplings:

Syrup

2 cups packed brown sugar

2 cups water

2 tablespoons butter

1 1/2 teaspoons vanilla

1 teaspoon fresh nutmeg

1/8 teaspoon salt

In a sauce pan on medium heat combine all the syrup ingredients.Cook for about 5 minutes or till the sugar is dissolved and the butter is melted. Pour into a 9 x 13 inch greased baking dish. Set aside. Pre-heat the oven to 350 degrees.

Dumplings

2 cups sifted all purpose flour

1 cup packed light brown sugar

2 teaspoons baking powder

1/2 teaspoon salt

3/4 cup milk

1 1/2 tablespoons unsalted butter

1 1/2 teaspoons vanilla

3/4 cup chopped pecans or walnuts

1/4 cup chopped dates and figs optional

In a mixing bowl using your hands combine the flour, brown sugar, baking powder and salt. Mix until well blended.

Add the milk, butter, vanilla,nuts and fruits if using. Mix with a wooden spoon.

Drop by tablespoon into the syrup mixture.

Bake for 40 minutes or until the dumplings are golden brown and the syrup is bubbly.

Serve with Whipped Cream.

Mixed Greens

Get only the smallest leaves possible for the tenderest and sweetest greens. I usually combine Mustard and Collards or Collards and Kale. Sometimes I combine Mustard and Kale. Or I just make a pot of one or the other. Just make sure to get greens that are fresh not yellowed or wilted.

Wash the greens well, making sure the greens are well washed to remove the sand and field dirt.

COUNTRY STYLE GREENS:

5 pound of greens your choice washed and trimmed

3 cups chicken stock

1 or 2 ham hocks depending on size

2 large onions peeled and quartered

1/3 cup brown sugar

4 tablespoons cider vinegar

2 dried red hot peppers optional

few splashes your favorite beer optional

Place all ingredients into a large stock pot. Bring to a boil, reduce the heat and simmer for 3 to 4 hours uncovered on a low heat.

Reserve the pot likker for later use or for dunkin hard bread into. YUM!!!!!!
