I still do not eat crabs or any seafood. I will catch them for you, cook them,pick them but never ever eat them. I know everyone keeps telling me I don’t know what I am missing but like I tell them I may very well be missing something but at least they get to eat more since I will not touch crabs. Give me a good steak any day.
Blue Crab Casserole:
1 8 oz.package of small shell macaroni, prepared according to package
1/2 cup butter
1/2 chopped red pepper
1/2 chopped green onion including tops
1/2 all purpose flour
1 teaspoon dry mustard
1/4 teaspoon pepper
1 qt of milk
3 pounds lump crab meat
6 ounces canned mushrooms
1 teaspoon Worcestershire sauce
1 4 ounce can pimientos chopped
1/4 teaspoon hot sauce
2 to 2 1/2 cups shredded cheddar cheese
Preheat the oven to 350 degrees.
Saute’ the onions and pepper in butter in a Dutch oven.About 5 minutes. Remove from heat.Stir in the flour,mustard, and pepper until well mixed. Slowly add the milk. Bring to a boil, stirring constantly;reduce heat and simmer 3 to 4 minutes.Add the macaroni,crab meat, pimentos,mushrooms,hot sauce, Worcestershire. Mix well but gently as not to break up the crab meat. Pour gently into a casserole,sprinkle with cheese.Bake uncovered for 30 to 35 minutes, or until bubbling hot and the cheese is melted.
Serve with crusty bread.

I am not sure why I am writing this an an entry in the blog but I just felt like it, I guess.
I am entering the local county fair and I am nervous about it. The Fair is only a little over a month away. I know alot of the Amish women down here are entering and it makes me nervous. They bake,can,quilt and sew all of the time. I just do it to eat healthier and save money. The Amish are fantastic bakers and preserve makers. I have tried many of their dishes and boy they are fantastic. They are among the kindest people I have ever met. They are always willing to share a tip here or make a suggestion there about anything I have ever asked them. They even share their recipes with me from time to time.
I am planning on entering the following items.
1) Bread and Butter Pickles
2) Watermelon Preserves
3) Pecan Pie or Sweet Potato Pie
4) Sweet Potato Bread
Any of ya’ll have any ideas please let me know. I want to try and narrow down my list to just 2 or 3 items to enter. Suggestions are always welcome. The feed back would be terrific.

This is a pie that I made the other night as I had unexpected guest stop by.All I had on hand was Whipped cream,a box of pistachio pudding, some vanilla and a can of sweetened condensed milk,and a graham cracker pie crust.
Pudding Pie:
1 can sweetened condensed milk
1 box instant pudding any flavor
1 teaspoon vanilla
1 tub whipped cream
1 graham cracker pie crust
Combine the pudding and sweetened condensed milk. Mix well. Add vanilla and mix well. Fold in the whipped cream. Combine till smooth. Pour into the pie crust. Refrigerate for 1 hour. Serve and enjoy.
Give it a try and it is fabulous and OH so simple. It takes barely 5 minutes to prepare.
Sit back and enjoy the compliments.
