Banana Pudding

This is a great dish to bring to backyard BBQ”S ,potlucks, family reunions or just for a nice dessert after supper. It is simple and not time consuming. Give it a try and let me know what you think. Banana Pudding:

1 1/2 cups sugar divided

2 tablespoons flour

1/2 cup sweetened condensed milk

1 cup evaporated milk

3 large eggs

1 stick of unsalted butter

1 teaspoon banana flavoring

1 teaspoon vanilla flavoring

1 box vanilla wafers

1/4 teaspoon cream of tartar

Preheat the oven to 375 degrees.

Mix one cup of sugar and the flour in a saucepan. Separate the eggs. Stir the yolks with a fork until well mixed. Add the milks into the same bowl as the egg yolks . Stir to combine, slowly add the egg mixture to the flour and sugar. Stir till well blended.

Cook over a low heat, stirring often, until the custard forms and thickens. Remove from the stove when thickened, add the butter and allow it to melt. Cool. Add the banana flavoring and stir to mix.

Layer the bananas and the vanilla wafers in a 9x5x2 inch baking dish. Pour the custard over the layered banana and vanilla wafers.

Add the cream of tartar to the egg whites . Using an electric mixer set on medium beat until frothy. Continue beating and slowly add 1/2 cup sugar and the vanilla. Beat till medium peaks form when the beaters are removed. Then spread on top of the custard and bake for 10 to 15 minutes or until light brown.
