Sugar – Free Chocolate Chip Cake Cookies

This is the first recipe I played with since Tim has gotten out of the hospital. He says the cookies are great and he really enjoys the cake like texture.

I hope if you have a family member or someone you care about has High Blood Pressure or Diabetes you should give them a try.

Sugar -Free Chocolate Chip Cake Cookies:

2 Cups all – purpose flour sifted well

1 Tsp baking powder

1 Tsp baking soda

1 cup softened Smart Balance or Benecol

1 cup brown sugar blend sweetener

3 large egg whites

1 1/2 Tbsp Pure Vanilla

2 cups milk chocolate chips

Preheat the oven to 375 degrees.

Cream the sugar and softened Smart Balance for 5 to 10 minutes. Add the sifted flour,baking powder, and baking soda. Mix well.

Add the egg whites and vanilla. Mix well.Slowly fold in the chocolate chips. Drop the dough by rounded tablespoons onto silpat lined cookie sheets. Bake for 11 – 14 minutes. Cool on the cookie sheet for 2 – 3 minutes. then finish cooling on wire racks till fully cooled.

Store in an airtight container.

Makes about 2 dozen cookies.
