This is something I made for a friend and she seemed to really enjoy it. So I thought I’d share it with ya’ll.
Patti’s Seafood Dip:
2 tablespoons salted butter
1 small to medium red pepper, diced small
1 medium onion, diced
2 stalks celery, tops removed and diced
the bottom half only of a 10 ounce can of creamed shrimp soup
1 cup of mayonnaise
1/2 pound grated parmesan cheese
1/2 pound fresh crab meat,picked over for shell and cartilage
1/2 pound very small shrimp
1/2 teaspoon pepper
fine bread crumbs
Pre – heat the oven to 325 degrees.
Melt the butter in a skillet over a medium heat.Add the red pepper,onions and celery and saute for 3 minutes. In a bowl combine the soup, mayonnaise ,cheese, crabmeat, shrimp and the pepper.Slowly stir in the sauteed vegetables. Mix to combine. Spoon the mixture into a lightly greased casserole dish. Sprinkle with bread crumbs. Bake 30 minutes or until bubbly. Serve with toast triangles (or whatever shape toast you desire. I use cookie cutters to make toast of different shapes,)

This is a favorite in my ham – loving family.
Traditionally in the days gone by,,
these biscuits were made by beating or pounding the dough until it blistered. This takes about 20 minutes and a really strong arm. Then it is baked and when they are done they are cut open a smeared in butter and a paper thin slice of ham.I still beat mine the traditional way but you could always use a food processor if you choose. I use the edge of a very strong plate or my meat hammer to beat the dough.. Give these biscuits try and you will love the way they bake and the texture.
Beaten Biscuits:
2 cups all purpose flour, sifted
1/8 teaspoon salt
1/4 teaspoon baking powder
1 1/2 tablespoon sugar (or you can use the equivalent amount of sugar substitute but the results are alittle different)
1/4 cup of lard, well chilled and cut into small pieces
1/3 cup cream ( I use a light cream or a lesser fat cream when I can find them )
2 tablespoons very cold water ( I use ice water the colder the better )
Pre – heat the oven to 450 degrees
Sift the flour, salt, baking powder and sugar together into a medium size bowl.Using a pastry cutter cut the lard into the flour till it looks like a coarse meal. Using a wooden spoon mix the dough as you slowly add the cream. Mix it well to form a dough into a ball, adding the ice water only if needed.
Place the dough on a lightly floured counter top, knead slightly.
With a mallet or whatever you will be using to beat the dough pound it a few times to form a rectangle. Fold the dough in half and beat it again. Continue this process until the dough turns white and the surface begins to blister on the surface. This usually takes about 15 minutes.
Roll the dough till it is about 1/4 inch thick. Using a 2 inch biscuit cutter, cut out the biscuits, prick the tops of the biscuits a few times with a fork.
Place on a greased baking sheet.
Bake for 15 minutes or until tops are golden.
Serve hot out of the oven with lots of butter.
These are delicious.
