Southern Mixed Greens

This is a great dish that I love to make for family Sunday Dinners. Hope ya’ll enjoy it. My family sure does.

Southern Mixed Greens:

2 pounds collard greens washed well

2 pounds Kale washed well

2 pounds mustard green washed well

1 ham hock

2 large onions cut in quarters

1/4 cup sugar

2 quarts chicken broth

2 tablespoons vinegar or to taste, I prefer apple cider vinegar

Place the broth, sugar, onion and add the greens as they much as possible keep adding the greens as they shrink down. Add the vinegar. Bring to a boil, reduce heat and simmer covered for 3 to 4 hours. Drain but be sure to save the pot likker for adding to soup stocks as it freezes well.
