This is the 7 Layer Taco Salad I told ya’ll about. Hope ya’ll try it and let me know what you think.
7 Layer Taco Salad:
shredded lettuce to cover the bottom of the dish
1 pound cooked taco meat
1 1/2 cup seeded chopped tomato
1 cup black olives
1 small jar salsa/taco sauce
1 cup sour cream
1 cup guacamole
1 cup cheddar cheese
Layer the salad in the order of ingredients listing beginning with the lettuce and ending with the cheese.Cover and refrigerate for at least 8 hours. Serve with tortillas or tortilla chips.

This recipe was created because we loved the grilled chicken salad that you can buy at the Deli in our local Giant Food. They never seemed to have enough and the price was a bit high if you asked me. I am able to make it for about 75% less than when buying it from the deli.
2 pounds boneless skinless chicken breast
1 tablespoon garlic powder not salt.
1 tablespoon onion powder
1 tablespoon black pepper
1 teaspoon celery seed
1/2 teaspoon chili powder
1 small onion chopped
1/2 cup celery chopped
1/2 cup mayonnaise
1 tablespoon mustard
salt and pepper to taste
Wash and pat dry the chicken. Sprinkle the spices on the chicken.Grille over a low heat till chicken is done about 25 minutes. Let the chicken cool till you can easily handle it. Chop the chicken into large chunks. Add the mayonnaise,mustard,salt,pepper, onion,and celery. Mix well. Chill covered. Serve on rolls or lettuce leaves.
This is great for light suppers,brunches,brown bagging it even for the kids lunches.

This is a salad I learned to make as a young girl and still enjoy it to day. I have made this a slightly more grown up version of the original. I hope ya’ll will give it a try.
SEVEN LAYER SALAD:
1 small head if curly green leaf lettuce or spinach
1/2 cup chopped sweet or red onion
1/2 cup chopped red pepper or hot peppers
1/2 cup shredded carrots
1 cup chopped celery
1 10 oz. package of thawed frozen green peas
1 cup Hellmans Light Mayonnaise
3 tbsp sugar
1/4 cup chopped fried bacon (fried crisp) or 1/4 cup bacon bits
1 cup shredded sharp cheddar cheese
Put in order all of the above ingredients, starting with the lettuce and ending with the cheese.Put it all in a square storage container. Do Not Stir. Leave the salad in a tightly covered container for at least 8 hours or over night in the refrigerator. The salad will keep up to a week.
I hope ya’ll do try this salad play around with the ingredients and you can come up with some terrific combinations. I have even made it as a 7 Layer Taco salad.
