Tim thought he did not like avocados till he realized avocados were what Guacamole was made out of. He still doesn’t like eating plain avocado but he likes Guacamole.
Guacamole:
6 -7 ripe avocados
4 tomatoes,peeled,seeded, and chopped
3 green chili’s, seeded and chopped
1 small onion grated
1 1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground pepper
juice of one lime or 1 lemon whichever you prefer
Peel, pit,and mash the avocado. Mix with the tomatoes,chilies, and onion. Season with the salt and pepper.Squeeze lime/lemon juice over the top to keep it from browning.

This is about my most favorite way to serve beets. Hope ya’ll like this Beet Salad.
Cold Beet Salad:
14 medium beets cooked,peeled and sliced
7-8 tablespoons raspberry vinegar
1 cup light virgin olive oil
3-4 cloves of garlic, minced
Place the beets in a large mixing bowl, set aside. Combine the vinegar,oil, and garlic. Mix well. Pour over the beets.Mix well.Let stand for 1 -2 hours before serving at room temperature. Season with salt and pepper if you like.

My Mama loved the Carrot Salad from Chick Filet so I decided to try and create one of my own that I know she would be proud of. I think I did just that with this recipe. Give it a try and let me know what ya’ll think.
Mama’s Carrot Salad:
2 pounds carrots shredded washed, peeled,and shredded
3/4 cup raisins
3/4 cup olive oil
1/4 cup apple cider vinegar
1/2 teaspoon cinnamon
salt and pepper to taste
1/2 cup chopped walnuts
Add the vinegar to the oil. Mix well. Add the cinnamon,salt and pepper mix well to combine well. In a large bowl combine the carrots,raisins and walnuts . Pour the dressing over mix well. Chill 1 hour before serving. Mix well prior to serving.
