Quick Chicken Soup/Miracle Soup

This is a soup I made whenever Joey got sick when he was a child. He felt it made him better and he was the one who renamed the soup Miracle Soup. This is an extra simple soup to make. I made it last night for Tim as he now has a bad case of the flu on top of the pneumonia . I hope it works a Miracle for Tim as well as it does for Joey.

Miracle Chicken Soup:

2 large cans of your favorite chicken broth

1 onion

1 bag frozen vegetables for soup

2 teaspoons thyme

1 bay leaf

1 teaspoon garlic powder

salt and pepper to taste

egg noodles as much as you like

2 boneless skinless chicken breast cut up

Add all the ingredients except for the noodles to a stock pot. Cook covered till chicken is done about 20 to 30 minutes. Add the noodles. Cook till the noodles are tender. Serve with butter crackers.

Movie Night

I am planning another movie night but I do not want to do the regular snacks. I am tired of the same old popcorn,chips and candy.so I have decided to try and do something alittle different this time and see how it goes. So far I have decided only on several different types of olives ( large green olives, mixed olives), several different types of cheese ( goat, brie, cheddar, blue), many different in season fruits and different types of nuts. Along with bread sticks and crackers. I want a more adult type of snacks. But I already know someone will say what no popcorn,nachos,or candy. I will let you know how it goes. I will also post pictures showing how it was all displayed.

Maryland Rockfish

It is Rockfish season again and Tim and I are out fishing at least 3 times a week. This past week we have had terrible rains and after the rains we went fishing but nothing was biting.

We shore fish. Tim uses a Surf Rod and I use a plain ole fishin pole. Our bait is shrimp or night crawlers. We have not had much luck so far this season as the waters are still alittle cold. The sea nettles (jelly fish) are already in the waters. Its really unusual for them to be in these waters so early in the season but they are here none the less.

Tim loves his Rockfish and I had to come up with this recipe for fried Rockfish for him. I Hope ya’ll give it a try. This is even a fish that I enjoy.

Maryland Fried Rockfish:

2 lbs rockfish fillets

Milk, as needed

1 ½ cups yellow cornmeal

1 ½ cups all-purpose flour

Salt and freshly ground pepper

1 1/2 tablespoons Old Bay seasoning

Olive oil, for frying

Soak the rockfish in milk to cover in shallow dish for 1 to 2 hours.

In another dish, mix the cornmeal and flour together. Season with salt, pepper, and Old Bay Seasoning. Remove the fish from the milk, 1 fillet at a time, letting the excess milk drip back into the dish. Coat well with the cornmeal mixture.

Pour olive oil into a cast iron frying pantill it is about 1/2 inch deep.Place over a medium heat until the oil is hot, add 2 or 3 fillets to the pan at a time. Fry about 4 minutes each side, or until golden brown. Remove the fish from the pan and drain well on paper towels. Serve with lemon wedges and tartar sauce. Enjoy.
