Super Simple Suppers Continued

This is a great dinner for serving on a busy week night. I love using a crock pot when time is tight and I know I must prepare a delicious dinner for my family and friends. The Crock Pot is also a great tool to use during the summer. To keep the heat down in the kitchen during the hot humid days of summer. I use mine alot during the summer. Dinner Plan 2:

Beef Pot Roast with Vegetables:

1 4 pound boneless beef roast

1/2 cup beef broth not bouillon

4 large potatoes washed and cubed

4 carrots washed,peeled and sliced

1 medium Vidalia onion sliced

1 bay leaf

1/2 teaspoon salt

1/2 teaspoon pepper

Put the vegetables and the onions in the bottom of the crock pot. Salt and pepper the meat and place on the top of the vegetables. Add the broth. Cover. Cook on low for 10 hours or on high for 6 hours.

I serve my roast with potato rolls and a salad.
