It’s Family Game Night

Last night Tim and I decided to go fishing at around 8 PM. Tim had a great night as we were fishing off the Solomon’s Island pier again and he uses a Surf Rod and I just fish with his late fathers fishin pole. Tim caught 4 good sized Croakers ( they really do make croaking sound when you catch them) and a Spot. We left at about 2 am. Came home and Tim cleaned the fish and I filleted them. This was a first for me. I did not do to bad. If I say so myself. The fish are now in the freezer till were ready to enjoy them.

So tonight we decided to stay home and have a nice quiet, cool relaxing evening. So it’s family game night/movie night. So I have thrown together a few finger foods for supper.

I have prepared Tacos, Taco Chicken Wings (recipe is posted under appetizers), Taco Chicken Tenders (recipe to follow) Sweet Tea. Plus there is plenty of bottled water and soda on hand also. Along with potato salad,coleslaw and macaroni salad. For dessert I am serving several different types of ice cream with the trimmings.

Taco Chicken Tenders:

1 bag chicken tender

2 cups flour

1 package of your favorite taco seasoning

butter CRISCO for frying

1 egg

Rinse the chicken tenders,pat dry. Beat egg. Combine the flour and the taco seasoning together and stir well to mix. Dip the chicken tenders into the egg then dredge in the flour mixture. Continue dipping and dredging the tenders. Fry in the hot oil. Fry for 8 -10 minutes or until juices run clear.
