Spicy Salsa

This is a really good Salsa recipe. It is simple to prepare and oh so delish. Give it a try and let me know what ya’ll think.

Spicy Salsa

10 cups chopped, seeded, peeled,cored tomatoes
5 cups chopped and seeded red bell peppers ( green peppers work best but Tim can not eat them so I use Red peppers)
5 cups chopped sweet onions
2 cups chopped and seeded jalapeno peppers
1 1/4 cups apple cider vinegar
3 cloves garlic, minced
2 tablespoons cilantro, minced (I use parsley as I prefer the flavor . or I divide it 1 tbsp cilantro and 1 tbsp parsley)
3 teaspoons salt

Combine all ingredients in a large sauce pot, Bring mixture to a boil. Reduce heat and simmer 10 minutes. Ladle hot salsa into hot jars, leaving 1/4 inch headspace.Wipe the rims. Adjust the caps. Process 15 minutes in a boiling water canner.

This recipe will make about 6 pints.
