Pre Season Football has Ended

Tonight was the last night of the Pre Season Football 2009. It was a nice four weeks of football. I am now ready for regular season football. Tim’s Dallas Cowboys did fair 2 wins 2 losses. So Tim is pretty happy with his team.

To celebrate the end of Pre Season we decided to have Tracy’s boyfriend Larry over for homemade lasagna. Everybody enjoyed the dinner, After dinner Eddie and Liz joined us for the game. This was my first football dinner this year but I know there will be many many more and I will share my game day menus with ya’ll throughout the season. hopefully ya’ll will find something ya’ll enjoy on the menus and give them a try.

Patti’s Lasagna:

2 pounds ground beef  (as lean as you can get)

1 1/2 pounds Italian sausage

1 pound ricotta cheese

1 large cottage cheese

1 pound mozzarella cheese

2 large eggs, slightly beaten

3 jars spaghetti sauce your favorite brand

2 tablespoons Italian seasoning

1 tablespoon garlic powder

8 ounces parmesan cheese (shredded) for topping the lasagna after it comes out of the oven

Brown the ground beef and Italian sausage; drain;  add 1/2 cup of spaghetti sauce mix well; set aside. While the meat is browning mix together the ricotta, cottage and mozzarella cheeses. Add the egg and spaghetti sauce to the cheese mixture mix well. Boil noodles as per package directions.

Pre heat the oven to 350 degrees.

Place about a 1/4 cup of sauce in the pan. Spread across bottom of the pan. place a layer of the prepared noodles in pan add 1/4 cup cheese spread over the noodles. Now add a layer of the meat mixture. Add another layer of noodles, cheese, and meat. Do this layering one more time ending with a final layer of noodles. Pour sauce over the last layer of noodles. Cover pans with foil. Bake in the oven for 1 hour to 1 hour fifteen minutes. Uncover for the last ten minutes of baking time. let rest for 10 minutes prior to cutting and serving. This recipe will make 2 pans of Lasagna.

Serve with a nice salad and garlic bread.

GO COWBOYS!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Hope to see ya’ll really soon.

Let me hear from ya’ll. Drop me a commit or too. WE love hearing from ya’ll.

Mom’s Favorite Broccoli Salad

My mom was going through chemo for breast cancer and she had lost interest in food as it had no taste to her anymore. Well I had this salad at a friends house and decided to try it for my mom. Well she just loved it and it made me quite happy to see her enjoy a salad or any type of food as she had not for such a long time.

It is a simple and easy recipe. Give it a try and let me know what you think.

Broccoli Salad:

1 bunch Broccoli washed and chopped, including the stems

1 8 ounce sour cream

1 package powdered ranch dressing mix

Mix the sour cream and ranch dressing mix in a bowl. Add the broccoli, stir to combine. refrigerate.

I have even fried up a couple slices of bacon, crumbled it up and added it to the broccoli. Even the kids liked broccoli served this way.

Cauliflower

Creamed Cauliflower:

1 medium head cauliflower, broken into flowerets, or 2 packages (10 oz each) frozen cauliflower flowerets

3 tablespoons butter

2 tablespoons flour

2 cups milk

salt and pepper to taste

dash cayenne pepper, optional

In a large saucepan of boiling salted water, cook cauliflower until just tender. In a separate 1-quart saucepan, melt butter. Add flour and stir over medium low heat until smooth and well blended. Gradually add milk, stirring constantly, and cook until thickened and smooth. Season to taste. Pour over hot drained cauliflower

This is a favorite recipe of mine to serve at Sunday dinner during the fall and winter. It is so simple and easy to prepare. Even the kids will enjoy it.
