Smoked BBQ Ribs

This is one of the simplest BBQ Rib recipes I have ever made. So fire up the grill and give them a try.

 

 

Patti’s Simple Smoked BBQ Ribs:

3 tablespoons dark brown sugar

1 tablespoon salt

1 tablespoon garlic powder

1 tablespoon dried minced onion

1 tablespoon cumin

1 tablespoon paprika

1 tablespoon freshly ground black pepper

1 tablespoon cayenne use less if you want less heat

2 racks pork spare ribs, about 2 to 4 pounds each, trimmed of fat, membranes removed from underside( ask the butcher at the store to do this for you)

favorite  Barbecue Sauce, I used Baby Ray’s Sweet BBQ sauce if not using my own

 

In a bowl, make a dry rub by combining the sugar,  salt, garlic powder, minced onion cumin, paprika, black pepper, and cayenne, and mixing well. Rub the ribs evenly on both sides and wrap in plastic wrap. Place on a baking sheet and refrigerate at least 8 hours or overnight.

Soak wood chips of choice in a bucket of water for 2 to 3 hours, then drain. Prepare a smoker according to the manufacturer’s instructions. Remove the ribs and unwrap. Place on the grill of the smoker and cook for 1 1/2 hours, adding more of the coals as needed during the cooking time.

Remove the ribs from the grill and remove the smoker pan . Return the ribs to the grill and baste with the Barbecue Sauce. Cook, turning and basting once, until cooked through, 15 to 19 minutes. Remove from the grill and serve with additional sauce on the side.

BBQ SAUCES

This is a sauce that my mom came up with one day when I was out at my in laws for a cook out and they forgot to get any BBQ sauce. So I called good old mom for a recipe for some great sauce. and this is what she came up with. Give it a try and let me know what ya’ll think.

 

Mom’s BBQ Sauce:

3 large sweet onions, chopped
1 tablespoon  olive oil
3 bottles chili sauce

2/3 cup  lemon juice
1/2 cup apple cider vinegar
about 1/2 bottle of Worcestershire sauce
1/2 tsp. salt
1/4 tsp. cayenne pepper
2 tbsp. mustard
1/2 cup brown sugar, packed

In a skillet, sauté chopped onions in  olive oil until tender. Remove from skillet and place in 4 quart saucepan. Add remaining ingredients, simmer on low-medium heat for about 1 hour, stirring often. Do not allow to stick or burn.

This is a great BBQ sauce for pulled pork, ribs and chicken

 

 

 

This is a great sweet BBQ Sauce that I created for grilling chicken.

Patti’s Honey Barbeque Sauce:

3/4 cup honey
1/2 cup chili sauce

1/4 cup butter (1/2 stick)
1 tablespoons apple cider vinegar
2 tsp. Dijon style mustard
2 tbsp. brown sugar
1 clove garlic,chopped fine

Combine all the ingredients in a sauce pan and simmer the mixture for 5 minutes. Makes about 1 1/2 cups sauce. Leftover can be stored in the refrigerator for later use or as dipping sauce for chicken nuggets.

 

This is a great no fail BBQ Sauce and can be used a a marinade on steak before grilling.

Never Fail BBQ Sauce:

1 cup catsup
1/4 cup brown sugar
1/4 cup sweet onion, finely chopped
1/4 cup orange juice
1/4 cup apple cider vinegar
2 tablespoons Worcestershire sauce

Boil for 5 minutes. Pour over chicken , pork chops or ribs. this is a good all purpose barbeque sauce.

Barbeque Season is Upon Us Hooray

This is one of my favorite times of the year all the vegetables are starting to come in at the farms and friends and family are firing up their grills.I am going to share with ya’ll my dry rubs and barbeque sauce recipes with you on the few post and I will be sharing with you some of my BBQ dishes and party ideas hope ya’ll like them and let me know what ya’ll think of them. Patti’s Kansas City Style BBQ Dry Rub:

1/2 cup brown sugar

1/4 cup paprika

1 tablespoon black pepper

1 tablespoon salt

1 1/2 tablespoons chili powder

1 tablespoon garlic powder

1 tablespoon onion powder

1 1/2 teaspoons cayenne

 

Combine all ingredients together and transfer to an air tight container.

 

 

This is my take on a Memphis style dry rub. I fell in love with the dry rub used at a BBQ restaurant in Bowie, Maryland called Memphis Barbeque but it is no longer there so I had to come up with my own recipe. I hope this comes close.

My Memphis Style Dry BBQ Rub:

5 teaspoons paprika

2 teaspoons salt

2 1/2 teaspoons onion powder

2 1/2 teaspoons fresh ground black pepper

1 1/2 teaspoons cayenne

 

Mix ingredients together. Store in an airtight container. Spread evenly on prepared ribs that have been patted dry and let sit until the rub appears moist.

 

 

My friend Gene spent many years in Lumberton, North Carolina and he always says everything is better in Carolina. So I just created this Carolina Style dry rub for Gene. I hope he likes it.

 

My Carolina BBQ Rub:

2 tablespoons salt

3 tablespoons sugar

3 tablespoons brown sugar

2 tablespoons ground cumin

2 tablespoons chili powder

2 tablespoons freshly ground black pepper

1 tablespoon cayenne pepper

1/4 cup paprika

 

Combine all ingredients in a small bowl and mix well; use as a dry rub on beef, chicken,  or pork.
