Thanksgiving Rolls

These are the rolls that I have served several times for Thanksgiving and Christmas to rave reviews.

So since the season is almost upon us I am going to start sharing my Holiday Menus with you. Hopefully you will find something of interest and give them a try.

 

This year for Thanksgiving we will be having:

Roast Turkey with dressing

Candied Sweet Potatoes

Mashed Potatoes and Gravy

Green Bean Casserole

Creamed Corn

Mac and Cheese

Pumpkin Praline Pie

Pumpkin Pie

Rolls and Butter

Liz’s Creamed Onions

 

This is my recipe for my holiday Yeast Rolls.

 

Holiday Yeast Rolls:

7 cups. flour (save 1 cup to knead)
2 packages. quick yeast
1/2 – 3/4 cup sugar
1/4 teaspoon salt
2 sticks butter
1 cup. sour cream
1/2 to 1 cup buttermilk

Place in microwave. Heat until butter melts (should be hot but be able to stand to stick your finger in this). Mix wet to dry ingredients and knead 10-15 minutes. Put in warm place and let rise about 20 minutes. Put dough on floured board and punch down. Shape in desired shapes. Let rise again, 20 minutes or until doubled. Brush tops with melted butter. Bake 20 minutes at 350 degrees. Makes 2 dozen or more.

Popeye’s have the best Biscuits

Tim and I both love to treat ourselves out to Popeye’s for some great fried chicken and biscuits every once in awhile. I love Popeye’s biscuits so much I decided to try and come as close as I could to their recipe. This is about the fifth or sixth recipe I created and Tim says these are the closest so far.

I hope ya’ll give them a try and let me know how close I have gotten.

Patti’s Close As Can Be Popeye’s Biscuits:

 

2 cups bisquik

3/4 cup sour cream

1/2 cup Sprite or citrus flavored soda

 

Mix Bisquick and sour cream with pastry blender.

Stir in Sprite.

Pat lightly on a floured surface.

Cut out biscuits and place 2 inches apart on ungreased cookie sheet at 400°F for 10-12 minutes. Brush with melted butter

Simple but oh so good White Bread

I have always wondered why my favorite white bread came from the little Amish General store in Loveville till I finally got the recipe the other day. It is so simple and easy to make I just had to share it with ya’ll. I hope ya’ll enjoy it.

Amish White Bread:

2 cups warm water (110 degrees F)

2/3 cup white sugar

1 1/2 tablespoons active dry yeast

1 teaspoon salt

1/4 cup vegetable oil

6 cups bread flour or a good white flour

In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.

Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour. Keep out of drafts.

Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9×5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans. Again keep out of drafts.

Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve with butter and your favorite jams and jellies.
