Pre Season Football has Ended

Tonight was the last night of the Pre Season Football 2009. It was a nice four weeks of football. I am now ready for regular season football. Tim’s Dallas Cowboys did fair 2 wins 2 losses. So Tim is pretty happy with his team.

 

To celebrate the end of Pre Season we decided to have Tracy’s boyfriend Larry over for homemade lasagna. Everybody enjoyed the dinner, After dinner Eddie and Liz joined us for the game. This was my first football dinner this year but I know there will be many many more and I will share my game day menus with ya’ll throughout the season. hopefully ya’ll will find something ya’ll enjoy on the menus and give them a try.

 

Patti’s Lasagna:

2 pounds ground beef  (as lean as you can get)

1 1/2 pounds Italian sausage

1 pound ricotta cheese

1 large cottage cheese

1 pound mozzarella cheese

2 large eggs, slightly beaten

3 jars spaghetti sauce your favorite brand

2 tablespoons Italian seasoning

1 tablespoon garlic powder

8 ounces parmesan cheese (shredded) for topping the lasagna after it comes out of the oven

 

Brown the ground beef and Italian sausage; drain;  add 1/2 cup of spaghetti sauce mix well; set aside. While the meat is browning mix together the ricotta, cottage and mozzarella cheeses. Add the egg and spaghetti sauce to the cheese mixture mix well. Boil noodles as per package directions.

Pre heat the oven to 350 degrees.

Place about a 1/4 cup of sauce in the pan. Spread across bottom of the pan. place a layer of the prepared noodles in pan add 1/4 cup cheese spread over the noodles. Now add a layer of the meat mixture. Add another layer of noodles, cheese, and meat. Do this layering one more time ending with a final layer of noodles. Pour sauce over the last layer of noodles. Cover pans with foil. Bake in the oven for 1 hour to 1 hour fifteen minutes. Uncover for the last ten minutes of baking time. let rest for 10 minutes prior to cutting and serving. This recipe will make 2 pans of Lasagna.

Serve with a nice salad and garlic bread.

Mom’s Cheesy Scalloped Potatoes

This was one of my mothers favorite ways to have potatoes. This is a really simple and tasteful way to prepare potatoes. I hope ya’ll give this recipe a try and let me know what ya’ll think.

CHEESY SCALLOPED POTATOES:

About 1 cup hot milk

4 potatoes washed and sliced thin

1 small onion chopped

3/4 cup shredded cheddar cheese

salt and pepper to taste

Grease a casserole pan. Preheat the oven to 450 degrees.

Place a layer of potatoes, some onion,and some cheese. Sprinkle with salt and pepper. Continue layering. End with a layer of potatoes. Pour hot milk to within 1/2 inch of the top of the potatoes.

Bake in the oven for 15 minutes, turn the heat down to 350 degrees ‘cover loosely with foil. Bake for 30 minutes. Remove the foil and continue to bake for another 30 minutes or until the potatoes are tender.

Remove from the oven and let stand for 10 minutes before serving.

Chicken and Dumplings

This is a great late fall or winter dish. It is a great comfort food dish.

Chicken and Dumplings

1/2 cup unsalted butter

!/2 cup chopped onion

1/2 cup chopped celery

1/2 cup flour

2 teaspoon sugar

1 teaspoon salt

1/2 teaspoon white pepper

1 teaspoon dried parsley

4 cups chicken stock

1 can peas and carrots or 2 cups fresh ( not 2 cup each but 2 cups peas and carrots combined)

4 cups cooked chicken

In a large stock pot combine the butter, onion and celery. Saute’ for about 4 minutes. Add the flour,sugar,salt ,pepper,parsley and chicken broth stir well to dissolve the flour and get rid of ant lumps. Bring to a boil and cook and stir for about 2 minutes. Add the peas and carrots, reduce the heat to medium low and cook till carrots are almost tender. about 10 minutes.Add the chicken. Stir. Pour into a greased 13 X 9 inch baking dish or large casserole. Set aside and prepare the dumplings. Pre -heat the oven to 350 degrees.

Dumplings

2 cups biscuit mix

2 teaspoons parsley

2/3 cups milk or chicken stock

Combine the biscuit mix, parsley, and milk in a bowl; mix with a fork till moistened. Drop by teaspoonful on the top of the casserole. Should make about 12 dumplings. Bake uncovered for 30. Cover with foil and continue to bake for 10 minutes or until dumplings are done.
