Brownies

Tim still has a sweet tooth and he just LOVES Brownies so I had to try and make one as sugar free as possible. That is why I just love Splenda’s Baking Sugar. It has been a true life saver in a lot of my old recipes. It is just a matter of getting the sweetener amounts right. Even our friends and family don’t realize the Brownies are Sugar Free. Give them a try and let me hear from ya’ll as to if your family enjoy these brownies.

SUGAR – FREE BROWNIES:

1/2 cup unsalted butter not margarine (The texture is to dry with margarine)

1/4 cup unsweetened cocoa

2 large brown eggs

1 cup Splenda Baking Blend

1 cup all purpose flour

1 teaspoon vanilla

1/8 teaspoon salt

1/4 cup fat free milk

1/2 cup chopped pecans or walnuts (optional)

Preheat oven to 350 degrees.

Spray the pan with Pam Olive oil spray and flour .

In a small saucepan, over medium heat, melt butter and cocoa together, stirring occasionally until smooth.

Remove from heat and set aside to cool. In a large bowl, beat eggs until frothy. Stir in Splenda.

Combine the flour and salt; stir into the egg mixture then mix in the cocoa and butter.

Finally stir in the 1/4 cup of milk and if desired, the pecans or walnuts. Pour into the prepared pan bake for 25-30 .

Stick in a toothpick–when it comes out clean its done. Let cool and then cut into squares.

Low Fat Pumpkin Oatmeal Cookies

This is a recipe I created this evening after I roasted the last of the fall pumpkins for pies and had some leftover and did not want to waste any so I am trying several different cookie recipes. I will post them for your enjoyment if they come out as good as these did. I bet they would be great all fall long also. They will make a good low fat low sugar snack for the kids after school also.

Low Fat Pumpkin Oatmeal Cookies

Ingredients:

1 cup pumpkin
2 egg whites,

1/2cup brown sugar

1 1/2 cup all-purpose flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. cloves

1/4 tsp vanilla
3 cups rolled oats
1 cup raisins or as I prefer craisins you could even use dried cherries in this recipe

Directions:

Pre-heat the oven to 350 degrees.

Spray baking sheet with cooking spray. In a large bowl combine pumpkin and egg whites. In a separate bowl combine sugar, flour, baking soda, cinnamon, nutmeg, cloves, oats, and raisins. (Batter will be very dry at first.) Mix ingredients together just until moistened.
Drop cookies by tablespoonfuls onto prepared baking sheet, 2″ apart. You can leave the cookies in the shape of a ball. The cookie will stay in the shape of the ball so I flatten mine out a bit. Bake at 350 degrees for 15 minutes. .

Sugar – Free Chocolate Chip Cake Cookies

This is the first recipe I played with since Tim has gotten out of the hospital. He says the cookies are great and he really enjoys the cake like texture.

I hope if you have a family member or someone you care about has High Blood Pressure or Diabetes you should give them a try.

Sugar -Free Chocolate Chip Cake Cookies:

2 Cups all – purpose flour sifted well

1 Tsp baking powder

1 Tsp baking soda

1 cup softened Smart Balance or Benecol

1 cup brown sugar blend sweetener

3 large egg whites

1 1/2 Tbsp Pure Vanilla

2 cups milk chocolate chips

Preheat the oven to 375 degrees.

Cream the sugar and softened Smart Balance for 5 to 10 minutes. Add the sifted flour,baking powder, and baking soda. Mix well.

Add the egg whites and vanilla. Mix well.Slowly fold in the chocolate chips. Drop the dough by rounded tablespoons onto silpat lined cookie sheets. Bake for 11 – 14 minutes. Cool on the cookie sheet for 2 – 3 minutes. then finish cooling on wire racks till fully cooled.

Store in an airtight container.

Makes about 2 dozen cookies.
