With this heatwave that we are having right now and it’s not even summer yet. I am pulling out all my Crock Pot Dinners. I am not adding to the oppressive heat by adding heat from my kitchen to it for nothing. It’s already almost unbearable. So here is yet another simple supper for those really busy Days of Our Harried Lives. I hope ya’ll enjoy it.

Simple Supper Menu 3:

Crock Pot Chicken:

1 3-4 pound fryer chicken

3 carrots washed and sliced

2 medium sweet onions, sliced

3 celery stalks washed and sliced

1/2 teaspoon white pepper

1/2 cup chicken broth not bouillon

1/2 teaspoon basil

1/2 teaspoon thyme

Place the carrots, onion and celery in the bottom of the crock pot.Add the whole chicken.Add seasonings and broth.Cover and cook on LOW for 10 hours or on HIGH for 6 hours. Serve over Jasmine Rice and with fresh rolls from your local bakery. No need to turn on the oven.

See Supper Simple Suppers 1 for the recipe for Jasmine Rice.
