Super Simple Quick Suppers

“What’s for dinner?” Do you dread that question? These days, with jobs, kids, deadlines, and schedules, there isn’t enough time for preparing dinner there is never enough time  to plan, never enough time to shop, never enough time to think about what to cook. So try these Super Simple Supper recipes to make delicious meals in no time!

Dinner Plan 1

Chicken Tenders W/Jasmine Rice and Glazed Baby Carrots:

Enough chicken strips for the family

1 1/2 cups chicken breader

2 tablespoons Soul Food Seasoning

Oil for fryer

1 egg

Rinse the chicken strips in cool water. Scramble egg. Season egg with a little Soul Food Seasoning about 1/2 teaspoon. Dip the chicken tender in the egg wash and then dredge in the Chicken Breader. Fry in oil for about five to seven minutes. Drain. Sprinkle the remaining Soul Food Seasoning over the Chicken Strips.

Jasmine Rice:

1 cup rice

2 cups water

3 tablespoons butter

Place the rice and water in a microwave safe dish. Add butter. Cover tightly. Microwave on high for 5 minutes. Then finish cooking on 50% power for 15 minutes. Let stand for 5 minutes the fluff with a fork and serve.

Glazed Baby Carrots:

1 pound baby carrots

1 stick butter

1/2 cup sugar

2 tablespoons honey

Cook carrots till tender in boiling water. Remove from heat and drain. Place butter in pan over a med low heat.Add sugar. Continue to stir and cook over med low heat till all sugar is dissolved. Add honey. Stir well. Add carrots and heat till carrots are warm.

Billy’s Coming to Dinner Crock Pot London Broil

Tim’s brother Billy was suppose to come to dinner. So I decided to make London Broil. But the A/C died yesterday morning. So using the oven was out of the question. So I decided to create a Crock Pot recipe. It was hot as the devil in the house yesterday. No matter how many fans I had going nothing helped. I decided about 10 am that cooking was out of the question. So experimenting began.

Billy called about 4:30 pm and said he couldn’t make it for dinner. I was alittle ticked but figured it was better for him not to come just incase the London Broil was awful and as hot as it was in the house there was no need for him to suffer in the heat along with Tim and I.

I was really surprised that dinner turned out great. So I decided to share the recipes with ya’ll. Hope you enjoy it.

London Broil

1Â London broil

1 small onion sliced

1 teaspoon garlic powder

1 1/2 teaspoon season salt

1 pound fresh mushrooms cleaned and sliced or 1 large can drained

1/2 cup water

3 tablespoons flour use at the end to make gravy

Place all the ingredients in the crock pot except the flour. Turn the crock pot on low for eight hours. Remove liquid from the crock pot and measure. Pour into a sauce pan and add the flour. Whisk until thickened.

Jasmine Rice Microwaved

1 cup Jasmine Rice

1 &1/3 cups of water

1/2 stick of butter

Place the rice, butter, and water into a 2 quart microwaveable container. Cover Microwave on high for 5 minutes. Reduce the power to 50% and microwave for 10 more minutes. Let sit for 2 minutes. Stir and serve.
