My Entry is the one with the white ribbon
Well it is fair time again and once again I entered.This year I entered 2 items this year. I entered my seedless Blackberry Jelly and my 3 Bean Salad.
To my surprise after seeing so many entries for the dilly bean,pickle and the jelly catorgories I thought for sure I didn’t have a snow balls chance in heck of placing on either one. But to my surprise I took 3rd place for my 3 Bean Salad. Recipe follows.
Patti’s 3 Bean Salad:
1 pound fresh green beans,washed and tips removed par boiled
1 pound fresh yellow beans, washed and tips removed par boiled
1 can (about 16 ounces) red kidney beans, drained
1 cup thinnly sliced purple onion
1/2 cup cider vinegar
1/3 cup vegetable oil
1/2 cup granulated sugar
1 teaspoon salt
1 teaspoon white pepper
1 teaspoon celery seed
Rinse kidney beans; drain. Combine beans, green pepper, and sliced onion. whisk together remaining ingredients; pour over bean mixture. Toss three bean salad well and chill for at least 4 hours( I usually make mine at least 24 hours in advance). Store three bean salad in refrigerator.

This is my favorite Tuna Casserole. It is served cold.
Patti’s Cold Tuna Salad:
1 (12 ounce) package egg noodles, cooked ( I sometimes use shells or elbow macaroni)
2 (12 1/2 ounce) cans tuna, drained and washed
1 cup onion, chopped
3 hard boiled eggs, chopped
4 tablespoons mayonnaise add more if desired
1 teaspoon salt ( I prefer sea salt)
1 teaspoon white pepper
2 tablespoons sweet pickle relish
1 cup celery, chopped
Boil water in a 5 quart pan and cook egg noodles to al dente.
Drain and let cool.
Combine tuna with onion, celery, mayonnaise, pickle relish add chopped boiled eggs. Mix well.
Add salt and ground pepper and mix well.
Taste. Add more seasoning or mayonnaise to your liking.
Best if chilled for at least 1 hour.

My mom was going through chemo for breast cancer and she had lost interest in food as it had no taste to her anymore. Well I had this salad at a friends house and decided to try it for my mom. Well she just loved it and it made me quite happy to see her enjoy a salad or any type of food as she had not for such a long time.
It is a simple and easy recipe. Give it a try and let me know what you think.
Broccoli Salad:
1 bunch Broccoli washed and chopped, including the stems
1 8 ounce sour cream
1 package powdered ranch dressing mix
Mix the sour cream and ranch dressing mix in a bowl. Add the broccoli, stir to combine. refrigerate.
I have even fried up a couple slices of bacon, crumbled it up and added it to the broccoli. Even the kids liked broccoli served this way.
