Rock Fish

This is another terrific recipe I have come up with to use the many fresh Rock Fish that Tim and I catch during fishing season. It combines two of Tim’s favorite seafood’s. His Maryland Blue Crab and his Maryland Rock Fish. Give this one a try and please let me hear from ya’ll as to whether or not you enjoyed this recipe or not.

BAKED STUFFED ROCKFISH

1 lb lump crabmeat

¼ stick butter, melted and cooled

1 lemon squeezed

Salt and freshly ground pepper to taste

2 tablespoons chopped parsley

1 whole rockfish boned about 3 or 4 pounds

Milk, as needed

4 strips bacon

Preheat oven to 350° F.

Place the crabmeat in a bowl, pour the melted butter and lemon juice over the top and toss. Season with salt and pepper. Mix in the parsley. Stuff the crab mixture inside the fish and secure with skewers or toothpicks. Cover the bottom of a baking dish large enough to hold fish comfortably with milk about ¼ inch deep. Place the fish in the dish. Sprinkle lightly with salt and pepper. Top with the bacon.

Bake for 40 to 45 minutes, or until the fish flakes at the touch of a fork. Baste occasionally during baking with the milk from the dish. When done, transfer the fish to a serving platter. Remove the bacon and discard. Pour any remaining cooking liquid over the fish and serve.

Maryland Rockfish

It is Rockfish season again and Tim and I are out fishing at least 3 times a week. This past week we have had terrible rains and after the rains we went fishing but nothing was biting.

We shore fish. Tim uses a Surf Rod and I use a plain ole fishin pole. Our bait is shrimp or night crawlers. We have not had much luck so far this season as the waters are still alittle cold. The sea nettles (jelly fish) are already in the waters. Its really unusual for them to be in these waters so early in the season but they are here none the less.

Tim loves his Rockfish and I had to come up with this recipe for fried Rockfish for him. I Hope ya’ll give it a try. This is even a fish that I enjoy.

Maryland Fried Rockfish:

2 lbs rockfish fillets

Milk, as needed

1 ½ cups yellow cornmeal

1 ½ cups all-purpose flour

Salt and freshly ground pepper

1 1/2 tablespoons Old Bay seasoning

Olive oil, for frying

Soak the rockfish in milk to cover in shallow dish for 1 to 2 hours.

In another dish, mix the cornmeal and flour together. Season with salt, pepper, and Old Bay Seasoning. Remove the fish from the milk, 1 fillet at a time, letting the excess milk drip back into the dish. Coat well with the cornmeal mixture.

Pour olive oil into a cast iron frying pantill it is about 1/2 inch deep.Place over a medium heat until the oil is hot, add 2 or 3 fillets to the pan at a time. Fry about 4 minutes each side, or until golden brown. Remove the fish from the pan and drain well on paper towels. Serve with lemon wedges and tartar sauce. Enjoy.
