Another Super Soup

Here is another great soup for a rainy spring day. Give it a try an let me know what ya’ll think.

 

 

Sausage and Kale Soup:

8 oz.  Smoked Sausage, sliced lengthwise and then into 1/2 inch pieces

2 quarts beef broth

3 medium potatoes, peeled and cubed

1/4 cup chopped onions

1/4 cup chopped celery

21/2 cups cleaned, coarsely chopped fresh kale

salt and black pepper to taste

Pour broth into 3-quart saucepan. Bring almost to a boil over medium-high heat. Add potatoes, onions and celery; cook, uncovered, until potatoes are fork-tender. Add sausage. Reduce heat to low; simmer, covered, 20 minutes. Stir in kale; simmer 15 minutes more. Season with salt and pepper. Serve hot.

Another Crab Soup Recipe

Marylanders sure love their crabs made several different ways, This is another Crab Soup recipe I came up with for Tim. He says that it stacks right up there with the best. So I hope ya’ll will give it a try and let me hear from ya’ll.

 

 

Tim’s Crab Soup:

2 quarts. beef broth water
3/4 cup. diced celery
1 lb. back fin crab meat
1 lb. frozen mixed vegetables
1 (20 oz.) can stewed tomatoes
1 tbsp. vegetable oil
1 tsp.old bay seafood seasoning (or to taste)

Combine broth,and celery,  in a large pot and bring to a boil. Reduce to simmer and cook for 5 to 7 minutes. Add crab meat, mixed vegetables, tomatoes, oil, and seasoning. Bring to a second boil, reduce to simmer, and cook 30 minutes, stirring occasionally.

Super Soup

This is another one of the great soups that I learned how to make from my mom. Her soups were the best, Give it a try and let me hear from ya’ll.

 

 

Mom’s Hamburger Soup:

1 lb. ground beef

1 med. onion, chopped
1 cup chopped carrots
14 oz. can beef broth
8 oz. can stew tomatoes1

1 cabbage cut up and cored

1 bag frozen vegetables, mixed
1/2 tsp. basil
1/4 cup barley
4 cups beef broth or water
3 tbsp. ketchup
1 bay leaf

Brown ground meat and drain well. Add other ingredients and simmer for 1 to 1 1/2 hours. Season to taste. Freezes well. Serves 6.
