My take on Jambalaya

This is my version of a Southern dish that I just love give it a try and let me hear from ya’ll.

Patti’s Sweet Italian Sausage Jambalaya:

1 (19 ounce) package sweet Italian sausage, cut into 2-inch pieces ( you can use hot Italian sausage if you prefer but my family prefers either mild or sweet)

1/2 cup diced sweet onion

1/2 cup diced celery

1 (14.5 ounce) can diced tomatoes

1 (10 ounce) package frozen cut okra, thawed

1 cup chicken broth

1/2 cup uncooked rice (not fast cooking ie Success)

1/2 teaspoon hot sauce I prefer a Chipotle hot sauce)

1 teaspoon oregano

In a nonstick skillet over medium heat, cook sausage alone until done. Set aside. In same skillet, saute onion and celery until tender. Add cooked sausage, tomatoes, okra, chicken broth, rice, hot sauce, oregano . Stir to combine. Bring to a boil. Cover, reduce heat to low and simmer for 15 to 20 minutes or until rice is tender.

Southern Grit Casserole

Grits are so versatile that I can not believe that so many people have never cooked with them that I am sharing yet another great Grit Casserole recipe with ya’ll.

Southern Grit Casserole:

6 cups water

2 cups uncooked grits

1/2 cup butter, divided

3 cups shredded Cheddar cheese, divided

1 pound ground pork sausage

12 eggs

1/2 cup milk

salt and pepper to taste

Preheat oven to 350 degrees F. Lightly grease a large baking dish.

Bring water to a boil in a large saucepan, and stir in grits. Reduce heat, cover, and simmer about 5 minutes, until liquid has been absorbed. Mix in 1/2 the butter and 2 cups cheese until melted.

In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and mix into the grits. Beat together the eggs and milk in a bowl, and pour into the skillet. Lightly scramble, then mix into the grits.

Pour the grits mixture into the prepared baking dish. Dot with remaining butter, and top with remaining cheese. Season with salt and pepper.

Bake 30 minutes in the preheated oven, until lightly browned
