This is the first recipe I came up with to try and make my Mama’s creamed corn.
This is a good one but not quite as good as hers. I hope ya’ll will give it a try and let me here from you as to what ya’ll think. This is a really simple recipe as it calls for frozen corn instead of fresh corn.
Creamed Corn:
3 (10 ounce) packages frozen corn kernels, thawed
1-1/2 cups heavy cream
1-1/2 teaspoons salt
3 tablespoons granulated sugar
1/4 teaspoon freshly ground black pepper
3 tablespoons butter
1-1/2 cups whole milk
3 tablespoons all-purpose flour
1/4 cup and 2 tablespoons freshly grated Parmesan cheese
In a skillet over medium heat, combine the corn, cream, salt, sugar, pepper and butter. Whisk together the milk and flour, and stir into the corn mixture. Cook stirring over medium heat until the mixture is thickened, and corn is cooked through. Remove from heat. Serve hot.

This is a recipe I got many years ago from a friend up north by way of Maine. Hope ya’ll enjoy this recipe.
Northern Corn Chowder:
2 slices of bacon, cut into strips
1 tablespoons unsalted butter
1 yellow onion, diced
2 tablespoons all-purpose flour
2 cups fresh corn
1 potato, peeled and diced
2 1/2 cups whole milk
1/2 cup cream
1/2 teaspoon fresh ground black pepper
1 teaspoon salt
In a heavy bottom soup or stock pot, sauté the bacon in the butter on medium heat until the bacon is cooked, but not crisp. Add the flour and onion, and cook for 5 minutes. Add the potato, corn, milk, salt, black pepper, and stir well.
Bring up to a gentle simmer, reduce heat to low and cook, stirring occasionally, until the potatoes and onions are tender. Ladle half the chowder into a blender and blend into a fine puree. Add back into the pot with the other half the un-blended mixture. Adjust the seasoning and serve immediately.

I just love creamed corn. My Mama made the best in the world. I never was able to get her recipe. She told me over the phone once and I wrote down most of the recipe but then I didn’t get it all so the recipe for Fresh Creamed Corn is a combination of mine and Mamas. I hope ya’ll give it a try. I think it is almost as good a Mama’s. Give it a try and let me know what ya’ll think.
Fresh Creamed Corn:
12 ears corn, shucked and silks removed
2 sticks unsalted butter
1 cup cream
2 tablespoons flour
salt and pepper to taste
2tablespoons sugar
Cut the corn from the cobs. Make sure to scrape the cob to get as much of the corn milk as possible. Melt 1/2 stick of butter and add the flour. Make a golden roux.Place the corn kernels,cream,sugar, and remaining butter into a Dutch oven. Add the roux. Cook over a low heat till well heated and thickened. If the creamed corn is not sweet enough add 1 more teaspoon of sugar. Stir well.
