These are the green beans I remember from childhood at Mama’s. I have added onion and I cook mine in chicken stock. They are still really good. Hope ya’ll give them a try.
Southern String Beans
2 pounds string beans washed and snapped
3 slices thick sliced bacon cut up
1 large white onion cut up
1 1/2 cups chicken stock
3 caps of cider vinagar
salt & pepper to taste
Place all of the ingredients into a medium stock pot. Heat on medium high and bring to a rolling boil, reduce heat to low. Continue to simmer on low for 4 – 5 hours. Adding more stock as needed.
